I love healthy food, mostly for the way it makes me feel.
When my diet is balanced I sleep better, break out less, and have more motivation to exercise.
Don't get me wrong, I LOVE muffins and cookies.
Also, I only do easy. I am not patient or skilled enough to do super fancy cooking/baking--it's all simple, delicious, and (relatively) healthy.
